Mickey-shaped Pretzels

- 1 1/2 cups warm water (110°F)
- 1 tablespoon sugar
- 2 teaspoons kosher salt
- 1 package active dry yeast (2 1/4 teaspoons)
- 22 ounces all-purpose flour (about 4 1/2 cups)
- 2 ounces unsalted butter, melted
- Vegetable oil, for greasing the bowl and baking sheet
- 10 cups water
- 2/3 cup baking soda
- 1 large egg yolk beaten with 1 tablespoon water (for egg wash)
- Pretzel salt or coarse sea salt
- In a mixing bowl, combine the warm water, sugar, and kosher salt. Sprinkle the yeast on top and let it sit for about 5 minutes, until it becomes foamy.
- Add the flour and melted butter to the yeast mixture. Using a dough hook attachment, mix on low speed until the dough comes together and is smooth and elastic, about 5 minutes. If the dough is too sticky, add a little more flour, 1 tablespoon at a time.
- Remove the dough from the mixing bowl and place it in a greased bowl. Cover with a clean towel and let it rise in a warm place for about 1 hour, or until it doubles in size.
- Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper and lightly grease it with vegetable oil.
- In a large pot, bring 10 cups of water and the baking soda to a rolling boil.
- While the water is boiling, divide the dough into equal-sized pieces and roll each piece into a long rope, about 18 inches long. Shape the ropes into Mickey Mouse heads by forming two large circles for the ears and a smaller circle for the face, pinching the ends together to seal.
- Carefully add the pretzels, one or two at a time, to the boiling water. Boil for about 30 seconds, then remove using a slotted spoon and place them onto the prepared baking sheet.
- Brush each pretzel with the egg wash and sprinkle with pretzel salt or coarse sea salt.
- Bake the pretzels in the preheated oven for about 12-15 minutes, or until they are golden brown and cooked through.
