Mickey-shaped Pretzels

  • 1 1/2 cups warm water (110°F)
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 1 package active dry yeast (2 1/4 teaspoons)
  • 22 ounces all-purpose flour (about 4 1/2 cups)
  • 2 ounces unsalted butter, melted
  • Vegetable oil, for greasing the bowl and baking sheet
  • 10 cups water
  • 2/3 cup baking soda
  • 1 large egg yolk beaten with 1 tablespoon water (for egg wash)
  • Pretzel salt or coarse sea salt
  1. In a mixing bowl, combine the warm water, sugar, and kosher salt. Sprinkle the yeast on top and let it sit for about 5 minutes, until it becomes foamy.
  2. Add the flour and melted butter to the yeast mixture. Using a dough hook attachment, mix on low speed until the dough comes together and is smooth and elastic, about 5 minutes. If the dough is too sticky, add a little more flour, 1 tablespoon at a time.
  3. Remove the dough from the mixing bowl and place it in a greased bowl. Cover with a clean towel and let it rise in a warm place for about 1 hour, or until it doubles in size.
  4. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper and lightly grease it with vegetable oil.
  5. In a large pot, bring 10 cups of water and the baking soda to a rolling boil.
  6. While the water is boiling, divide the dough into equal-sized pieces and roll each piece into a long rope, about 18 inches long. Shape the ropes into Mickey Mouse heads by forming two large circles for the ears and a smaller circle for the face, pinching the ends together to seal.
  7. Carefully add the pretzels, one or two at a time, to the boiling water. Boil for about 30 seconds, then remove using a slotted spoon and place them onto the prepared baking sheet.
  8. Brush each pretzel with the egg wash and sprinkle with pretzel salt or coarse sea salt.
  9. Bake the pretzels in the preheated oven for about 12-15 minutes, or until they are golden brown and cooked through.
  10. Allow the pretzels to cool slightly before serving. Enjoy your homemade Mickey-shaped pretzels with your favorite dipping sauce!
