Croque Glacé Recipe – Disney’s Warm Brioche Ice Cream Sandwich

The Croque Glacé made its debut at EPCOT’s France Pavilion inside L’Artisan des Glaces. Inspired by the French tradition of pairing brioche with sweet fillings, Disney elevated the idea by combining a fresh brioche bun with premium ice cream, pressed warm to form a golden shell around the creamy center. This treat has quickly become a fan-favorite for visitors who want a unique dessert that blends warm and cold in one bite.

  • 1 fresh brioche bun (slightly sweet, soft)
  • 1 scoop of premium ice cream (vanilla, chocolate, or seasonal)
  • 1 tablespoon chocolate or caramel sauce (optional)

•⁃1 teaspoon butter for pressing (optional)

  1. Prepare the brioche: Slice the brioche bun horizontally without completely separating the halves.
  2. Add the ice cream: Place one generous scoop of your favorite ice cream inside the bun. Drizzle with chocolate or caramel if desired.
  3. Seal and press: Close the bun and gently press into a panini press or waffle iron on medium heat for 1–2 minutes, just until the brioche is golden and slightly crisp.

•4.Serve immediately: The outside should be warm and toasty, while the ice cream inside stays creamy and cold.
