- 1 lb. ground beef
- ½ white onion, diced
- ½ cup dill pickle, diced
- 4 oz. Velveeta Cheese
- 1-2 tbsp yellow mustard
- A couple shakes of Worcestershire sauce
- 1 package egg roll wrappers
- 1 cup vegetable oil for frying
- Salt and pepper, to taste
- Cook the Beef and Onions: Place the ground beef and diced onion in a skillet over medium heat. Cook for about 10 minutes, breaking up the beef into crumbles as it cooks. Drain the meat and onions, then return to the skillet.
- Add Cheese: Add the Velveeta Cheese to the skillet and stir until melted.
- Mix Ingredients: Transfer the mixture to a large bowl. Stir in the diced pickles, mustard, Worcestershire sauce, salt, and pepper.
- Prepare Wrappers: Place a small bowl of water next to your work surface. Remove an egg roll wrapper from the stack, and cover the remaining wrappers with a damp paper towel to prevent them from drying out.
- Fill and Roll: Place the wrapper on the work surface with a corner facing toward you. Place about ¼ cup of filling on the wrapper, and fold the bottom corner up over the filling. Tightly roll the wrapper in a cylinder, tucking in the corners as you roll until the wrapper completely encloses the filling.
- Fry: Heat the vegetable oil in a skillet over medium heat. Fry the spring rolls until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.
