  • 1 lb. ground beef
  • ½ white onion, diced
  • ½ cup dill pickle, diced
  • 4 oz. Velveeta Cheese
  • 1-2 tbsp yellow mustard
  • A couple shakes of Worcestershire sauce
  • 1 package egg roll wrappers
  • 1 cup vegetable oil for frying
  • Salt and pepper, to taste
  1. Cook the Beef and Onions: Place the ground beef and diced onion in a skillet over medium heat. Cook for about 10 minutes, breaking up the beef into crumbles as it cooks. Drain the meat and onions, then return to the skillet.
  2. Add Cheese: Add the Velveeta Cheese to the skillet and stir until melted.
  3. Mix Ingredients: Transfer the mixture to a large bowl. Stir in the diced pickles, mustard, Worcestershire sauce, salt, and pepper.
  4. Prepare Wrappers: Place a small bowl of water next to your work surface. Remove an egg roll wrapper from the stack, and cover the remaining wrappers with a damp paper towel to prevent them from drying out.
  5. Fill and Roll: Place the wrapper on the work surface with a corner facing toward you. Place about ¼ cup of filling on the wrapper, and fold the bottom corner up over the filling. Tightly roll the wrapper in a cylinder, tucking in the corners as you roll until the wrapper completely encloses the filling.
  6. Fry: Heat the vegetable oil in a skillet over medium heat. Fry the spring rolls until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.
