1. Cook the Bacon:
In a large Dutch oven or heavy pot, cook diced bacon over medium heat until crispy. Remove with a slotted spoon and set aside, leaving the drippings in the pot.

Add chopped onion and celery to the bacon fat. Cook for 5–6 minutes until softened and fragrant.
