1. Prepare the dough:
– In a medium bowl, whisk flour, sugar, and salt.
– Cut in cold butter until mixture resembles coarse crumbs.
– Add ice water, 1 tbsp at a time, until dough comes together.
– Divide dough in half, wrap in plastic, and chill for 30 minutes.
2. Form the tarts:
– Preheat oven to 375°F.
– Roll out each dough half to ⅛-inch thick and cut into 3×4-inch rectangles.
– Place 6 rectangles on a parchment-lined baking sheet.
– Spoon 1–2 tbsp filling onto the center of each.
– Top with remaining rectangles, pressing edges with a fork to seal.
3. Bake:
